      <image:caption>This shrub is found in the cooler regions of Australia, predominantly Tasmania. The leaves and berry can be used fresh or dried! With its berry content high in antioxidants, the Indigenous people used this plant for its medicinal benefits, ranging from tooth aches to stomach problems. Compared to the familiar traditional black peppercorn, the Tasmanian pepperberry profiles an earthy sharpness with a bite of numbing heat. I enjoy using this versatile plant to season meats and sauces or for drinking in teas.</image:caption>

      <image:caption>The seeds from the Acacia species of tree, or wattle, have been used by the Indigenous peoples for thousands of years as a flour. It’s known for its high content of potassium, calcium, iron and zinc. It has a subtle yet delicate nutty flavor, with hints of chocolate and coffee. I like to use this ingredient ground up to accent savory and sweet dishes, especially pastries. It also is a great additive to warm drinks in the cooler winter months.</image:caption>

With the Indigenous inhabitants utilizing this fruit for its high content of vitamin C and potassium, this temperamental ingredient needs to be respected as it can be highly toxic if not picked or handled correctly. Much of the edible product today is grown by Indigenous communities around Australia. Profiling a bold rich caramel flavour, I like using it to add depth and body to sauces.</image:caption>

      <image:caption>Recently popular and known as a universal element in everything from gins to desserts; this flowering and highly aromatic plant grows wildly in subtropical regions of Australia. Used traditionally by the Indigenous peoples for its universal curing qualities, vitamin and mineral contents, it also boasts great insect repelling abilities! The leaves are used fresh or dried and possess an irresistible lemon lime flavour. Not unlike lemongrass, however more subtle and delicate. I tend to use this elegant ingredient to amplify poultry and fish dishes, however it really shines through with sweet dishes, as it bonds well with fatty elements. As it is used in everything from steeping teas to cosmetic products, you can also find this product in many award winning gins from Australia’s best distilleries.</image:caption>

      <image:caption>I believe the key to any change is awareness. Once you are conscious of something, it has a chance to become.  When I first arrived to Australia, I could sense its long history.  The landscape was old, the plants and animals were unique and the smell of the air carried a hot aromatic earthiness.  As a developing chef in Melbourne, I would soon become better acquainted with some of Australia's unique and sustainable elements and start incorporating them into my food.  Although still much to learn, I had a newfound purpose to create awareness of what makes this ancient land so special.</image:caption>
